Gold Rush Cocktail Recipe #GoKnightsGo

Today marks the start of the Las Vegas Golden Knights second season and I couldn’t be more thrilled! I can’t wait to settle onto the couch with a Gold Rush and watch the game tonight! A Gold Rush is a combination of bourbon, lemon, and honey syrup that goes down so easily you’ll barely notice the alcohol. Seriously, these things are potent. I started making this golden cocktail last year to celebrate the Knights making the playoffs and it quickly became a tradition. Today I’m sharing the recipe with you to kick off hockey season!

You will need:

2 oz Bourbon (I like Evan Williams)

3/4 oz fresh squeezed lemon juice (1-2 lemons) I can’t emphasize this enough, use freshly squeezed lemon juice. It makes a huge difference!

3/4 oz honey syrup (instructions below)

Sauce Pan

Measuring cup

A cocktail shaker (or a pitcher if you’re making a large batch like I do!)

Makes 1 cocktail

  1. First you’ll need to make the honey syrup. Pour equal parts honey and water (if you’re making one cocktail you’ll need 1/2 cup of each) into a small saucepan, then cook it over medium heat until the honey is completely dissolved. Set the syrup aside to cool.
  2. Once the honey syrup has cooled, you can add all of the ingredients to the shaker or pitcher and shake/stir to combine. Serve over an ice ball or a couple cubes of ice. Enjoy responsibly!
